75 at Liberty: Sneak peek inside Liberty London's swanky new restaurant

An exciting new ‘dining destination’ is set to open inside a prestigious London department store.

Seventy Five at Liberty is the first stand-alone restaurant from British dining specialists Goose + Berry.

The new restaurant will open on the second floor of the iconic Regent Street store on Tuesday, 8th April.

The swanky stand-alone eatery is opening to coincide with Liberty’s 150th anniversary. The restaurant takes its name from the year Liberty was founded - 1875.

Head Chef Joe Holness, formerly of Fera at Claridge’s and Da Terra, has crafted an innovative, sharing-style menu which invites diners to gather over breakfast, lunch, afternoon tea or dinner.

The fare takes its cues from modern British cuisine, celebrating fresh, seasonal ingredients sourced locally and sustainably, including herbs and honey from Goose + Berry’s own hives.

Signature small plates include goat’s cheese & almond croquettes and torched mackerel with pickled carrot and chervil sauce.

While larger plates include Swaledale chicken breast with salsify and thyme, as well as British Hampshire pork chop and fresh herb salsa verde.

Indulgent desserts to finish off the meal include a creamy chocolate mousse with preserved cherries.

An all-day brunch menu will also be available, and those looking to enjoy one of Britain’s most cherished pastimes, Seventy Five’s picturesque afternoon tea, from Head Pastry Chef Lizzie Ross pays homage to Liberty’s rich arts and crafts heritage.

Cocktails are inspired by the store’s signature LBTY fragrance collection. Creations are named after specific scents and incorporate key notes such as Adelphi Sun, which blends jasmine with fresh and zesty grapefruit.

The interiors draw inspiration from Liberty’s signature aesthetic, blending arts and crafts influences with contemporary design. Bold Liberty prints and layered fabrics in warm colour palettes of burgundy, pinks and green create an inviting dining environment, reflective of the welcoming ambience throughout the store.

Wall panels showcase Chinoiserie motifs and Persian Garden illustrations. Vintage velvet references add elegance, while wallpaper with intricate botanical designs is complemented by contemporary geometric patterns, creating a sophisticated interplay of colour and texture.

A standout feature is the bespoke fabric ceiling installation, a central focal point and first of its kind.

Art has always been at the heart of Liberty, and Seventy Five will continue this legacy with an ongoing Artist in Residence series, where the walls of the dining room play host to the work of revered artists, all available for purchase.

The first Artist in Residence will be renowned cartoonist, illustrator, and writer, Sir Quentin Saxby Blake, offering guests a rare opportunity to own a piece of illustrated history.
